Germany comes to the North Coast during Cleveland Beer Week at Chef Jonathon Sawyer’s Greenhouse Tavern! It’s a Pop Up Brick & Mortar menu with guest Chef Jeremy Nolen of Brauhaus Schmitz, Philadelphia’s only authentic German restaurant and beer hall. Chef Jeremy is constantly imparting his love of food preservation through curing, smoking, drying and salting. The dinner on Thursday includes:
Laugenbrezel mit Obatzda -soft pretzel, Bavarian cheese spread, salted white radishes;
Stopfleberwurst -Foie Gras Liverwurst, pickled black grapes, rye bread;
Kalbsbries Schnitzel -Sweetbread Schnitzel, quail egg, anchovy-caper vinaigrette, buckwheat spätzle;
Entenbratwurst mit Sauerkraut -Duck & Smoked Barley Malt Sausage, savoy cabbage sauerkraut, spicy beer mustard;
Himmel und Äd -“Heaven and Earth”, Blood sausage, celery root-apple puree, Tavern beer vinegar gastrique.

Renee – this sounds like ideal combo. In additon to being big fans of Greenhouse Tavern, my wife and I love German Food. When in Columbus, we never miss visiting Schmidts Susage House in German Village. I even make my own homemada sausages including a nice German Bockwurst a couple weeks ago . . .

Sawyer is always bringing great ideas to Cleveland. Adding this to Cleveland Beerweek is a plus especially at the Greenhouse. Hopefully on the roof. I can’t even imagine the beer pairing. Yum!
Would love to try the blood sausage since my grandfather used to make this in our basement when I was a child. Being the random winner and bringing my cousin who is in from Arizona would make for a great time at the end of her trip.
